Pecan Pie Cookies


I made these for Thanksgiving but am just getting around to posting the recipe lol.


Pecan pie is awesome to begin with, but turn it into little cookies and its even better! I say that eating just one cookie is better than having a whole slice of pie, but once you have one of these...you will probably end up eating the equivalent of a piece of pie ;)


Pecan Pie Cookies

Makes 3 dozen



Cookie Ingredients

1 cup packed brown sugar

3/4 cup butter, softened

1 egg

1 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking powder


Filling Ingredients

1 cup chopped pecans

1/2 cup packed brown sugar

1/4 cup whipping cream

1 tsp. vanilla


Directions

Preheat oven to 350 degrees. Combine all cookie ingredients, except flour and baking powder. Beat at medium speed until creamy. Reduce speed to low, add flour and baking powder. Beat until well mixed.


Shape dough into 1 1/4 inch balls. Place two inches apart on cookie sheets. Make indentation in center of each cookie with thumb.


Combine all filling ingredients. Fill each cookie with 1 tsp filling. Bake for 8-12 minutes or until lightly browned. Let cool for one minute then remove from cookie sheets.
